May a foreign worker be sponsored by more than one company when the employee knows that he/she is only going to work for one of the petitioners?

From the immigration perspective, the answer is still "yes." However, please remember that if a U.S. company is sponsoring someone for an H-1B, the company is relying on that person's availability in the future. The company may also be spending substantial sums obtaining the H-1B for the employee. Finally, if the person is being sponsored, a contract is likely to exist between the employer and the employee and/or the company and one of its clients.

Therefore, misleading a company may result in a breach of contract against the employee, not to mention that it creates a bad image. Consequently, as soon as you know that you will not be working for a company, please inform the company as soon as you come to that decision, and if there is a contract, please also think about contacting a lawyer in advance. His/her advice to you may be to stay with that company.
